About me
I have a PhD in Food Science and I am Assistant Professor at the Faculty of Veterinary Medicine of the Complutense University of Madrid.
My research work focuses on the sustainable valorization of agri-food by-products, the study of bioactive lipids and the development of innovative methodologies for the improvement of food safety.
I have consolidated my scientific career in reference centers such as the Food Science Research Institute (CIAL-CSIC) and the Institute of Food Science and Technology and Nutrition (ICTAN-CSIC), as well as in prestigious international institutions such as the University of Montpellier (France) and the University of Nottingham (UK).
I am passionate about teaching, yoga, healthy cooking and discovering new cultures through my travels around the world.
