About me

My name is Isabel Martínez García, and I hold a degree in Food Science and Technology from Rey Juan Carlos University (URJC). I later completed a Master’s in Advanced Human Nutrition Sciences at the International University of Valencia (VIU), where I discovered my passion for research and for experimenting with food in the lab.

I am currently a research staff member at URJC, where I am working on my PhD thesis. My research focuses on developing new analytical methodologies for the identification and quantification of bioactive compounds and toxins in food, with the aim of ensuring food safety and exploring the potential for revalorizing agri-food by-products.

As part of my academic journey, I completed a research stay at the University of Perugia (Italy), where I worked with a group specialized in studying food by-products and evaluating their biological and functional potential.

In my free time, I enjoy running outdoors—an activity that keeps me active while allowing me to explore new surroundings. Whenever possible, I travel to participate in races in places I’ve never been before. I also value connecting with nature as a way to disconnect and recharge both physically and mentally.
