About me

I am Associate Professor in the Faculty of Science at the Autonomous University of Madrid.
I teach in the Degree in Food Science and Technology and in the Master's Degree in Novel Foods. My line of research focuses on extraction processes of potentially bioactive compounds from different matrices for their use as food ingredients.
I really enjoy travelling and getting to know new places. Getting to know the culture and gastronomy. And above all, I love travelling with my family and my children.
I also enjoy cooking a lot.
