About me

Hello, my name is David. I studied Food Science and Technology, and my interest in food research led me to pursue a PhD in Biology and Food Sciences. I currently work as a professor at the Universidad Autónoma de Madrid, where I am also involved in research. My work focuses primarily on developing ecological and sustainable processes for extracting nutrients and bioactive compounds, with the aim of using them in the formulation of new food products and supplements designed to improve consumer health. Among the sources I study are plants, by-products from the agri-food industry, and, in recent years, insects—an emerging and still little-known food source with remarkable nutritional potential.
On a personal level, one of the things I enjoy most is spending time with family and friends, regardless of the activity. What matters is not the place, the time, or the reason, but the people you share it with. Professionally, one of the aspects I’m most passionate about is science communication. The internet has enabled unprecedented access to information, but it has also contributed to widespread misinformation—especially when it comes to food and nutrition. That is one of the main reasons I’m here today, taking part in this event: to share accurate, evidence-based knowledge in an accessible way.
