About me

Hello! I'm Esther. Since I was a child, I’ve felt a deep curiosity about everything related to life: how plants grow, what lies behind the food we eat, or why certain processes happen in nature. That fascination grew with me and eventually became my vocation.

I’m a food technologist with a Master’s degree in Agri-food Biotechnology, and I’m currently pursuing a PhD in Food Sciences. Today, I conduct research at the Food Science Research Institute (CIAL) as part of the INGREEN group, where I explore sustainable ways to improve our food system. One of the most exciting areas I work on involves using food waste—like fruit and vegetable leftovers—and transforming it into valuable ingredients with the help of insects. It’s a project that brings together science, sustainability, and a lot of creativity.

Beyond research, I’m passionate about traveling and discovering new cultures, reading, photography, and staying active. One of my favorite ways to relax and recharge is going for walks with my dog.
