About me

Tenured Scientist at the Spanish National Research Council (CSIC) at the Institute of Food Science, Technology and Nutrition (ICTAN). I have worked at Queen’s University Belfast (United Kingdom) and Teagasc (Dublin). My expertise lies in sensory analysis, meat science, and food technology. I lead the DIGISEN group, which focuses on the application of digital technologies in food science. I am currently the Principal Investigator of the Momentum project, “Development of Virtual Environments for Sensory and Consumer Analysis,” funded by the European Union – Next Generation EU.
